No-Bake Cookie Recipe + Cacao Powder Product Review

When I was a kid both my parents worked. When I was probably 3 years old or so, I can’t really remember, I remembered going to Grandma’s and a babysitter’s place frequently. When I got old enough though, my parent’s very rarely used babysitters because my dad worked mostly from home and on family land. The kids stayed in the house/yard and dad was available with a quick shout and checked in from time to time. He even made us cookies once every week or two. My dad did NOT know how to bake, but he definitely made some of my favorite cookies of all time.

One evening, doing my round of popular stuff on pinterest, I saw this recipe for No-Bake Chocolate Cookies and I knew it was the one. If it’s not exactly what my dad did, it’s so close you can’t even tell the difference. When I found this recipe I knew I had to try it and serve it to my own kids. I did however, make a few adjustments for flavor and health reasons.

Ingredients:

1 stick of butter (1/2 cup)
2 cups sugar (white, granulated)
1/4 cup organic cacao powder (I like this one from Freedom Superfoods)
1/2 cup milk (dairy and almond milk both work)
3 cups oatmeal
1/4 cup chia seeds
1/2 cup peanut butter
1 tsp vanilla (I don’t recommend imitation vanilla, I just ran out of the real stuff and had to get something cheap and quick.)

Directions:

In a saucepan, warm butter, sugar, cacao, and milk until it’s creamy and smooth.

Remove from heat and add peanut butter, vanilla, chia seeds, and oatmeal. I find adding in that order to be my preference so that the peanut butter can begin to melt a little. Stir until mixed well.

Drop by spoonfuls on aluminum foil, waxed paper, or a non-stick baking mat. Let cool. Store in an airtight container for up to a week.

Other Ideas for Organic Cacao Powder:

Add a tablespoon to your favorite coffee with a tablespoon of milk or cream for a yummy mocha flavor.

Add a scoop to your favorite energy bars or smoothie.

Put 1/4 cup into a white cake mix during mixing along with an additional tablespoon of oil for a quick chocolate cake conversion!
